Chicken
  • 4 pieces chicken breasts boneless and skinless
Vegetables
  • 1 cup spinach fresh
  • 1/2 cup sun-dried tomatoes chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
Sauce
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Garnish
  • 1/4 cup parmesan cheese grated

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
Cook the Vegetables
  1. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add diced onion and minced garlic, sauté for 2-3 minutes until translucent.
  3. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
Make the Sauce
  1. Pour in the heavy cream and chicken broth, stirring to combine.
  2. Add Italian seasoning, salt, and pepper, and let simmer for 5 minutes.
Combine and Serve
  1. Return the chicken to the skillet, coating it in the sauce.
  2. Sprinkle with grated parmesan cheese before serving.
  3. Serve hot with pasta or crusty bread.
