Bowl Ingredients
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 avocado ripe sliced
  • 1/4 cup cilantro chopped
  • 1 lime juiced for dressing
Optional Toppings
  • 1/2 cup sour cream or yogurt
  • 1/2 cup cheese shredded, optional
  • 1/4 cup jalapeños sliced, optional

Method
 

Roast Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
Prepare Bowl Ingredients
  1. While the sweet potatoes are roasting, prepare the other bowl ingredients.
  2. In a serving bowl, layer the cooked quinoa, black beans, corn, cherry tomatoes, and avocado.
  3. Once the sweet potatoes are done, add them to the bowl.
  4. Drizzle with lime juice and sprinkle with chopped cilantro.
Add Toppings
  1. Top the burrito bowl with optional toppings like sour cream, cheese, and jalapeños if desired.
