Spätzle
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup water
  • 1 teaspoon salt
Carbonara Sauce
  • 150 grams bacon diced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 2 large egg yolks
  • 1 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons parsley chopped

Method
 

Prepare Spätzle
  1. In a large pot, bring salted water to a boil.
  2. In a mixing bowl, combine flour, eggs, water, and salt. Mix until smooth.
  3. Using a Spätzle maker or a colander, press the dough into the boiling water.
  4. Cook until the Spätzle float to the surface, about 2-3 minutes. Remove and drain.
Prepare Carbonara Sauce
  1. In a skillet, cook the diced bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, reduce heat and add heavy cream, stirring to combine.
  3. In a bowl, whisk together egg yolks, Parmesan cheese, and black pepper.
  4. Remove the skillet from heat and quickly stir in the egg mixture until creamy.
Combine and Serve
  1. Add the cooked Spätzle to the skillet and toss to coat with the sauce.
  2. Serve topped with crispy bacon and chopped parsley.
