Method
Prepare Spätzle
- In a large pot, bring salted water to a boil.
- In a mixing bowl, combine flour, eggs, water, and salt. Mix until smooth.
- Using a Spätzle maker or a colander, press the dough into the boiling water.
- Cook until the Spätzle float to the surface, about 2-3 minutes. Remove and drain.
Prepare Carbonara Sauce
- In a skillet, cook the diced bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, reduce heat and add heavy cream, stirring to combine.
- In a bowl, whisk together egg yolks, Parmesan cheese, and black pepper.
- Remove the skillet from heat and quickly stir in the egg mixture until creamy.
Combine and Serve
- Add the cooked Spätzle to the skillet and toss to coat with the sauce.
- Serve topped with crispy bacon and chopped parsley.
