Zutaten
  

Schupfnudeln
  • 500 g potato noodles store-bought or homemade
Vegetables
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 200 g mushrooms sliced
  • 150 g spinach fresh or frozen
Seasoning
  • 2 tbsp olive oil for frying
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp nutmeg optional

Method
 

Prepare the Ingredients
  1. Boil the potato noodles in salted water according to package instructions until tender. Drain and set aside.
  2. Chop the onion, garlic, bell pepper, and slice the mushrooms.
Cook the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the bell pepper and mushrooms, cooking until softened, about 5 minutes.
Combine and Serve
  1. Add the cooked potato noodles and spinach to the skillet. Season with salt, pepper, and nutmeg. Stir gently to combine and heat through.
  2. Serve hot, garnished with fresh herbs if desired.
