Zutaten
  

Rice and Vegetables
  • 250 g long-grain rice rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 medium zucchini diced
  • 200 g broccoli cut into florets
  • 2 tablespoons olive oil for cooking
  • 500 ml vegetable broth or water
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon paprika for flavor
  • 2 tablespoons soy sauce optional

Method
 

Prepare the Ingredients
  1. Chop the onion, garlic, bell pepper, zucchini, and broccoli.
  2. Rinse the rice under cold water until the water runs clear.
Cook the Vegetables
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent, about 5 minutes.
  3. Add the bell pepper, zucchini, and broccoli, and cook for another 5-7 minutes until tender.
Add Rice and Broth
  1. Stir in the rinsed rice, paprika, salt, and pepper.
  2. Pour in the vegetable broth and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
Finish and Serve
  1. Remove from heat and let it sit covered for 5 minutes.
  2. Fluff the rice with a fork, stir in soy sauce if using, and serve hot.
