Chicken and Vegetables
  • 500 grams chicken breast diced
  • 2 tablespoons olive oil for cooking
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium red bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 teaspoon paprika smoked or sweet
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Orzo Pasta
  • 250 grams orzo pasta uncooked
  • 750 milliliters chicken broth or water
  • 1 cup fresh parsley chopped for garnish

Method
 

Cook Chicken and Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
  2. Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3 minutes.
  3. Stir in sliced bell peppers, paprika, salt, and black pepper. Cook for another 5 minutes until the peppers are tender.
Cook Orzo
  1. Add the orzo pasta to the skillet and pour in the chicken broth. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is cooked and has absorbed most of the liquid.
  3. Remove from heat and let it sit covered for 5 minutes.
Serve
  1. Fluff the orzo with a fork and stir in chopped parsley. Serve warm.
