Method
 

Cook Chicken
  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add chopped onion, bell pepper, and garlic to the pot. Sauté for 3-4 minutes until the vegetables are softened.
Combine Ingredients
  1. Stir in orzo pasta, chicken broth, oregano, salt, and pepper. Bring to a boil.
Simmer
  1. Reduce heat to low, cover, and simmer for 10-12 minutes until the orzo is tender and the liquid is absorbed.
Add Spinach
  1. Stir in fresh spinach and cook for an additional 2-3 minutes until wilted.
Serve
  1. Remove from heat, let sit for a few minutes, then serve warm.
