Zutaten
  

Soup Base
  • 2 tablespoons olive oil for sautéing
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots diced
  • 2 stalks celery diced
  • 1 teaspoon thyme dried
  • 1 teaspoon bay leaf whole
  • 1 liter vegetable broth or chicken broth
  • 250 grams green lentils rinsed and drained
Sausages
  • 4 pieces smoked sausages such as bratwurst or kielbasa
Seasoning
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Prepare the Soup Base
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes until the vegetables are softened.
  3. Stir in the thyme and bay leaf, then add the vegetable broth and lentils. Bring to a boil.
Cook the Soup
  1. Reduce the heat to low and simmer for about 30 minutes, or until the lentils are tender.
  2. While the soup is simmering, grill or pan-fry the sausages until browned and cooked through.
  3. Once the lentils are cooked, season the soup with salt and pepper to taste. Remove the bay leaf.
Serve
  1. Slice the sausages and serve them on top of the lentil soup. Enjoy hot.
