Vegetables
  • 500 grams potatoes peeled and diced
  • 1 large onion chopped
  • 2 carrots carrots peeled and diced
  • 2 sticks celery diced
  • 1 liter vegetable broth or chicken broth
Meat
  • 200 grams smoked sausage sliced
Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried thyme optional
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the vegetables
  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced potatoes, carrots, and celery to the pot and stir for a few minutes.
Cook the soup
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  2. Add the sliced sausage to the pot and cook for an additional 5 minutes.
Season and serve
  1. Season the soup with salt, pepper, and thyme. Stir well and remove from heat.
  2. Ladle the soup into bowls and garnish with fresh parsley before serving.
