Zutaten
  

Potatoes
  • 1.5 kg potatoes waxy or all-purpose variety
Feta Cheese
  • 200 g feta cheese crumbled
Olive Oil
  • 4 tbsp olive oil extra virgin
Herbs
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
Seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground

Method
 

Prepare the Potatoes
  1. Preheat the oven to 200°C (400°F). Wash and scrub the potatoes, then cut them into wedges.
  2. In a mixing bowl, toss the potato wedges with olive oil, salt, pepper, rosemary, and thyme until evenly coated.
Roast the Potatoes
  1. Spread the potato wedges in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy, turning halfway through.
Add Feta
  1. Remove the potatoes from the oven and sprinkle crumbled feta cheese over the top.
  2. Return to the oven for an additional 5-10 minutes, until the feta is slightly melted.
Serve
  1. Remove from the oven, let cool slightly, and serve warm.
