Casserole Base
  • 1 lb ground beef preferably lean
  • 1 cup chopped onion optional
  • 1 cup chopped bell pepper optional
  • 1 cup sliced mushrooms optional
  • 1 cup sugar-free ketchup for flavor
  • 1 cup shredded cheddar cheese for topping
  • 4 large eggs for binding
  • 1 cup heavy cream for creaminess
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add chopped onion, bell pepper, and mushrooms to the skillet and sauté until softened.
  4. In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and pepper.
  5. Combine the beef mixture with the egg mixture and stir in the sugar-free ketchup.
  6. Pour the mixture into a greased casserole dish and top with shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
