Marinade the Meat
- In a mixing bowl, combine the pork strips with Metaxa, olive oil, oregano, paprika, salt, and pepper. Mix well and let it marinate for at least 30 minutes.
Prepare the Sauce
- In a separate bowl, mix Greek yogurt, minced garlic, lemon juice, and dill. Stir until well combined and set aside.
Cook the Gyros
- Preheat the oven to 200°C (400°F). Spread the marinated pork evenly on a baking tray and bake for 25-30 minutes until cooked through and slightly crispy.
Serve
- Warm the pita bread in the oven for a few minutes. Serve the gyros in pita bread topped with diced tomatoes, cucumber, red onion, feta cheese, and a generous dollop of the yogurt sauce.
