Grilled Vegetables
  • 1 medium zucchini sliced
  • 1 medium red bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 medium red onion sliced
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Salad Base
  • 4 cups mixed salad greens such as arugula and spinach
  • 1 cup cherry tomatoes halved
  • 200 grams feta cheese crumbled
Dressing
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey optional
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Grill the Vegetables
  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the zucchini, bell peppers, and onion with olive oil, salt, and pepper.
  3. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.
Prepare the Salad
  1. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, and cucumber.
  2. Add the grilled vegetables to the salad bowl.
  3. Crumble the feta cheese over the top.
Make the Dressing
  1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, dijon mustard, salt, and pepper.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Transfer the salad to a serving platter and enjoy immediately.
