Chicken Marinade
  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoons olive oil for marinating
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon oregano dried
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Bowl Ingredients
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and sliced
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 small cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dill fresh or dried
  • 1/2 teaspoon salt

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate for at least 30 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest for a few minutes before slicing.
Prepare the Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt until well combined. Refrigerate until ready to serve.
Assemble the Bowls
  1. In each bowl, layer cooked quinoa, sliced grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives. Drizzle with tzatziki sauce before serving.
