Prepare Sweet Potatoes
- Preheat the oven to 200°C (400°F). Wash the sweet potatoes and poke holes in them with a fork. Place them on a baking tray and bake for 40-45 minutes until tender.
Cook Filling
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, paprika, salt, and pepper. Cook until the meat is browned and cooked through.
Stuff Sweet Potatoes
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out some flesh to create space for the filling. Mix the scooped sweet potato with the meat mixture.
Bake and Serve
- Stuff the sweet potato halves with the meat mixture, top with grated cheese, and return to the oven for an additional 10 minutes until the cheese is melted and bubbly. Garnish with chopped parsley before serving.
