Zutaten
  

Potatoes
  • 4 pieces large potatoes Russet or similar variety
Filling
  • 200 grams quark or cream cheese
  • 100 grams bacon diced
  • 1 piece onion finely chopped
  • 100 grams sour cream
  • 50 grams chives chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
Topping
  • 100 grams cheese grated, such as Emmental or Gruyère

Method
 

Prepare the Potatoes
  1. Preheat the oven to 200°C (400°F). Wash the potatoes thoroughly and pierce them several times with a fork.
  2. Place the potatoes on a baking tray and bake for about 40 minutes or until tender.
Make the Filling
  1. In a mixing bowl, combine quark, sour cream, diced bacon, chopped onion, chives, salt, and pepper. Mix well until smooth.
Fill the Potatoes
  1. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create space for the filling.
  2. Fill each potato half with the prepared filling and top with grated cheese.
Final Bake
  1. Return the filled potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden.
