  • 4 pieces Bell peppers Any color, tops cut off and seeds removed
  • 200 grams Feta cheese Crumbled
  • 100 grams Cooked quinoa Can substitute with rice
  • 1 tablespoon Olive oil For mixing
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
Colorful Salad
  • 100 grams Cherry tomatoes Halved
  • 1 cucumber Cucumber Diced
  • 100 grams Radishes Sliced
  • 50 grams Mixed greens Such as arugula and spinach
  • 2 tablespoons Balsamic vinegar For dressing
  • 1 tablespoon Olive oil For dressing
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Method
 

Prepare the Filling
  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine crumbled feta cheese, cooked quinoa, olive oil, oregano, salt, and black pepper.
Stuff the Peppers
  1. Stuff each bell pepper with the feta mixture until full.
  2. Place the stuffed peppers upright in a baking dish.
Bake the Peppers
  1. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
Prepare the Salad
  1. In a large bowl, combine cherry tomatoes, cucumber, radishes, and mixed greens.
  2. Drizzle with balsamic vinegar and olive oil, then season with salt and black pepper. Toss to combine.
Serve
  1. Serve the stuffed peppers hot alongside the colorful salad.
