Noodles
  • 300 grams egg noodles or any preferred noodles
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1 cup broccoli cut into small florets
  • 1 cup snap peas
Eggs
  • 2 large eggs beaten
Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil
Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons vegetable oil for frying

Method
 

Prepare the Noodles
  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. If using fresh noodles, rinse them under cold water to prevent sticking.
Stir-Fry the Vegetables
  1. Heat vegetable oil in a wok over medium-high heat.
  2. Add bell pepper, carrots, broccoli, and snap peas. Stir-fry for about 5-7 minutes until tender-crisp.
Add Eggs
  1. Push the vegetables to one side of the wok and pour the beaten eggs into the other side.
  2. Scramble the eggs until fully cooked, then mix with the vegetables.
Combine with Noodles
  1. Add the cooked noodles to the wok.
  2. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined and heated through.
Serve
  1. Season with salt and black pepper to taste. Serve hot.
