For the Baked Feta
  • 200 grams Feta cheese Block of feta cheese
  • 2 tablespoons Olive oil For drizzling
  • 1 teaspoon Dried oregano
  • 1 teaspoon Black pepper Freshly ground
For the Arugula Salad
  • 150 grams Arugula Fresh arugula leaves
  • 10 cherry tomatoes Cherry tomatoes Halved
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 tablespoon Olive oil For dressing
  • Salt to taste Salt

Method
 

Prepare the Baked Feta
  1. Preheat the oven to 200°C (400°F).
  2. Place the block of feta cheese in a baking dish.
  3. Drizzle olive oil over the feta and sprinkle with dried oregano and black pepper.
  4. Bake in the preheated oven for 20 minutes or until golden and soft.
Prepare the Arugula Salad
  1. In a mixing bowl, combine the arugula and halved cherry tomatoes.
  2. Drizzle with lemon juice and olive oil, and season with salt to taste.
  3. Toss gently to combine.
Serve
  1. Place the arugula salad on a serving plate.
  2. Top with the baked feta cheese and drizzle any remaining olive oil from the baking dish over the top.
  3. Serve warm and enjoy!
