Vegetables
  • 1 medium Zucchini sliced
  • 1 medium Bell Pepper diced
  • 1 medium Red Onion sliced
  • 200 g Cherry Tomatoes halved
  • 2 tablespoons Olive Oil for drizzling
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
Feta Cheese
  • 200 g Feta Cheese block

Method
 

Prepare the Vegetables
  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, combine zucchini, bell pepper, red onion, and cherry tomatoes.
  3. Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat.
Bake the Dish
  1. Place the feta cheese block in the center of the vegetables.
  2. Bake in the preheated oven for about 30 minutes, until the vegetables are tender and the feta is golden.
Serve
  1. Remove from the oven and let cool slightly before serving.
  2. Serve warm, spooning the roasted vegetables and feta onto plates.
