Prepare the Ingredients
- Dice the bacon and slice the onion thinly.
- Warm the chicken broth in a pot over low heat.
Cook the Bacon
- In a large skillet, heat the olive oil over medium heat.

- Remove the bacon and set aside, leaving the fat in the skillet.
Caramelize the Onions
- Add the sliced onions to the skillet and cook over medium-low heat until caramelized, about 15 minutes.
Cook the Risotto
- Add the Arborio rice to the skillet and stir for 2 minutes until the rice is slightly translucent.
- Pour in the white wine and cook until absorbed, stirring frequently.
- Add the warm chicken broth, one ladle at a time, stirring until absorbed before adding more.
- Continue this process for about 18-20 minutes until the rice is creamy and al dente.
Finish the Risotto
- Stir in the caramelized onions, cooked bacon, butter, and grated Parmesan cheese.
- Season with salt and pepper to taste.
- Serve immediately, garnished with additional Parmesan if desired.
