Main Ingredients
  • 1 cup Arborio rice Short-grain rice for risotto
  • 4 slices Bacon Diced
  • 2 cups Chicken broth Warm
  • 1 large Onion Thinly sliced
  • 1 cup White wine Dry
  • 1 cup Parmesan cheese Grated
  • 2 tablespoons Butter Unsalted
  • 1 tablespoon Olive oil
  • Salt to taste Salt
  • Pepper to taste Black pepper

Method
 

Prepare the Ingredients
  1. Dice the bacon and slice the onion thinly.
  2. Warm the chicken broth in a pot over low heat.
Cook the Bacon
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced bacon and cook until crispy, about 5 minutes.
  3. Remove the bacon and set aside, leaving the fat in the skillet.
Caramelize the Onions
  1. Add the sliced onions to the skillet and cook over medium-low heat until caramelized, about 15 minutes.
Cook the Risotto
  1. Add the Arborio rice to the skillet and stir for 2 minutes until the rice is slightly translucent.
  2. Pour in the white wine and cook until absorbed, stirring frequently.
  3. Add the warm chicken broth, one ladle at a time, stirring until absorbed before adding more.
  4. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
Finish the Risotto
  1. Stir in the caramelized onions, cooked bacon, butter, and grated Parmesan cheese.
  2. Season with salt and pepper to taste.
  3. Serve immediately, garnished with additional Parmesan if desired.
