Zutaten
  

Rice and Vegetables
  • 200 g Basmati rice or any long-grain rice
  • 1 cup peas fresh or frozen
  • 1 medium red bell pepper diced
  • 1 medium carrot grated
  • 1 cup corn canned or frozen
Dressing
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp curry powder adjust to taste
  • 1 tsp honey optional
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 tbsp sunflower seeds optional

Method
 

Cook the Rice
  1. Rinse the Basmati rice under cold water until the water runs clear. In a large pot, bring 500ml of water to a boil, add the rice, and cook for about 15 minutes or until tender. Drain and let cool.
  2. Once cooled, fluff the rice with a fork and set aside.
Prepare the Vegetables
  1. While the rice is cooking, prepare the vegetables. Dice the red bell pepper, grate the carrot, and if using frozen peas and corn, thaw them.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, curry powder, honey, salt, and pepper.
Combine Everything
  1. In a large mixing bowl, combine the cooled rice, peas, bell pepper, carrot, and corn. Pour the dressing over the salad and mix well.
  2. Garnish with chopped parsley and sunflower seeds before serving.
