Ravioli
  • 400 g fresh or frozen ravioli Choose your favorite filling
Vegetables
  • 1 cup bell peppers sliced, mixed colors
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Seasoning
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon Italian herbs dried

Method
 

Cook the Ravioli
  1. Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until al dente.
  2. Drain the ravioli in a colander and set aside.
Sauté the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the bell peppers and zucchini to the skillet. Cook for about 5 minutes until they start to soften.
  3. Stir in the cherry tomatoes and spinach. Cook for an additional 3-4 minutes until the spinach wilts.
Combine and Serve
  1. Gently fold the cooked ravioli into the vegetable mixture. Season with salt, pepper, and Italian herbs. Cook for another 2 minutes to heat through.
  2. Serve hot, garnished with additional herbs if desired.
