Method
Prepare the vegetables
- Wash and slice the zucchini, bell pepper, and carrot. Cut the broccoli into florets and halve the cherry tomatoes.
Cook the vegetables
- Heat olive oil in a large skillet over medium heat. Add the carrots and cook for 3 minutes.
- Add zucchini, bell pepper, and broccoli. Stir-fry for another 5-7 minutes until vegetables are tender.
- Add cherry tomatoes and cook for an additional 2 minutes.
Add seasoning and feta
- Sprinkle the dried oregano, salt, and black pepper over the vegetables. Stir well to combine.
- Remove from heat and gently fold in the crumbled feta cheese.
Serve
- Serve warm as a main dish or side. Enjoy!
