Sandwich Base
  • 8 slices rye bread or any preferred bread
  • 4 large eggs beaten
  • 2 cups cooked potatoes diced
  • 1 cup cooked ham diced
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter for frying
Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon paprika optional

Method
 

Prepare the Filling
  1. In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced potatoes and cook until golden brown, about 10 minutes.
  2. Add the diced ham and cook for an additional 5 minutes until heated through.
  3. Pour in the beaten eggs, season with salt, pepper, and paprika, and stir gently until the eggs are fully cooked.
  4. Remove from heat and stir in the shredded cheese until melted.
Assemble the Sandwich
  1. Toast the slices of rye bread until golden brown.
  2. Spread the remaining butter on one side of each slice of bread.
  3. On the unbuttered side, spoon a generous amount of the egg and potato filling.
  4. Top with another slice of bread, buttered side up, and grill in the skillet until golden brown on both sides.
  5. Cut in half and serve warm.
